Delicious Vegan Bolognese Recipe (Mushroom Protein)
One of my absolute favourites must be this vegan bolognese pasta dish. It’s easy to make, packed with protein and extremely delicious. It’s also not expensive!
Per 1 serving: cals: 276kcal | fat: 6.07g | carbs: 35.88g | prot: 16.55g
1 tbsp vegetable oil
1 red onion, finely chopped
3 garlic cloves, finely chopped
1 carrot, peeled and grated
3 tbsp soy sauce
1 tbsp tomato puree
1 tsp smoked paprika
½ tsp chilli flakes
1 large (500 g/ 18 oz ) jar bolognese pasta sauce
1 pack (300 g/ 10 oz) mushroom mince (or soy mince)
1 tbsp mixed herbs
½ tsp - 1 tsp pepper
300 g/ 10 oz spaghetti of your choice.
In a large pan heat vegetable oil and cook onion on medium heat for 5 minutes. Add garlic and cook for 1-2 more minutes.
Add carrot, soy sauce, tomato puree, smoked paprika, chilli flakes and pepper and cook for 3 more minutes while stirring.
Add mushroom or soy mince and your bolognese pasta sauce. When it starts boiling, simmer on low-medium heat for about 10 minutes, stirring occasionally.
Start cooking your preferred pasta per instructions on the package. Remove from heat 2 minutes earlier than the package instructions suggest and drain.
Add pasta that hasn’t been cooked all the way through to your bolognese pasta sauce and add mixed herbs and basil. Mix well. Cook until pasta is done or about 3 minutes more.
Serve with shredded vegan mozzarella, fresh basil and chopped spring onion.
